The cherries are first immersed in water tanks to remove any low-density coffees. They are then closed in an airtight fermentation tank for 7 days to ensure no oxygen can enter. The drop in pH levels brings out rich, juicy, fruity, and floral flavors that make for a coffee drinking experience you won’t soon forget.
Once out of the tanks, the cherries are dried for 30 days in shade on African beds. Once dried, they are then stored for about 4 weeks of resting before being milled and sorted.
